Yield: Makes 6 1½ cup servings
½ cup cubed celery
¾ cup cubed carrots
2 cups cubed ham
1 small chopped onion (½ cup)
2 cups cubed potatoes
1 teaspoon of granulated garlic
5 tablespoons butter
3 cups chicken broth
4 ½ cups water
1 teaspoon Rub dem Ribs Spicy Dry Rub Seasoning
¾ cup Rub dem Ribs Easy Cheesy Sauce and Soup Mix
1.In a large pot add the celery, carrots, onion, ham, granulated garlic, and 2 tablespoons of butter.
2.Cook over medium heat until the onions are translucent and the vegetables start to soften. 5 to 8 minutes.
3.Add 3 cups chicken broth and 3 cups water. Bring to a boil, reduce heat and simmer for 15 minutes.
4.Add the cubed potatoes and the Rub dem Ribs Spicy Mix Seasoning and return to a boil. Reduce heat and simmer for an additional 15 minutes.
5.While the soup is simmering, prepare the Easy Cheesy Sauce and Soup Mix according to package directions, using 1 ½ cups water and 3 tablespoons of butter.
6.After the soup has simmered the second 15 minute period and the Easy Cheesy Sauce and Soup Mix is ready, add the sauce mix to the soup.
7.Simmer an additional 10 minutes.
